Dashunzhai, founded in 1637, traced back to the past. In the 30th year of Chongzhen in the Ming Dynasty (1640), Liu Dashun, a Hui peddler from Nanjing, took his family to make a living in Tongzhou Town, where the city was prosperous at that time. He first walked around the streets and alleys in Tongzhou City. Carrying a load and selling, specializing in making business sugar and burning.
Later, because of the prosperity of business, he opened several shops on the street, which were made by his wife and his son, and named them "Dashunzhai". First, it means that the Liu family's name is, and second, it requires the smooth business. By the Qianlong period of the Qing Dynasty, business was even more prosperous, so they bought five storefronts in Huimin Hutong adjacent to the downtown city, two were shops and three were used as workshops, operating sugar-burning and southern pastries, and invited Wu Chunhong, a calligrapher in the capital, to write "Big" The font size of Shunzhai Nanguoshu" is carved on the blue bricks on the door lintel.
In the late Qing Dynasty, under the painstaking management of Liu Dashun's sixth-generation grandson and Liu Jiu's father, Dashun Zhai entered its heyday and set up four semicolons one after another. Dalaihao, located in Tongxian County, specializes in supplying raw materials such as oil and noodles. Dasheng, Daxin and Daxing, located in Beijing, sell sugar and firewood, and also sell oil, salt, sauce and vinegar.
In 1900, the Eight-Nation Alliance invaded Beijing. Dashunzhai is getting depressed day by day. In the first year of the Republic of China, Jiang Guite's troops in Tongzhou garrison mutinied and Dashunzhai was burned down. Although it was rebuilt that year, it was greatly damaged. By the eve of liberation, it is difficult to maintain.
Over the past few hundred years, Dashunzhai has created more than 40 distinctive halal pastries. Among them, the long-standing and famous Osmanthus Candy Huo Shao is known as one of the "Three Treasures of Tongzhou" (Sugar Huo Shao in Dashunzhai, Roasted Catfish in Xiaolou Restaurant, and Sauce Tofu in Wantong Sauce Garden).
The sugar-burning Jesus in Dashunzhai is soft, sweet and delicious, and stored for a long time.
Most of the customers of Dashunzhai are middle and lower-class Hui people, and low prices have become another feature of it. Dashunzhai is good at operating it wholesale pastries to vendors at a 10% discount to sell at the station. The pastries were sold to Beijing and Tianjin. A distribution station is also set up in the surrounding villages, and credit is allowed. The sub-item goods are low, the seller is not worried, and the buyer is not worried. Dashunzhai respects guests as if they are gods. When customers enter the store, the friend gives up his seat and serves tea first. If you don’t buy goods, you will take a look, chat, and the customers will leave, and become a voluntary publicity officer; if you buy, you will immediately send various snacks for tasting and selection. If you buy more, you will get the gift from the store; if you buy less, you will also help you prepare it well. Pack a "ticket" printed with "Dashunzhai" on it, which is both beautiful and famous.
In 1955, Dashunzhai conducted a public-private joint venture and went to Tongxian Food Factory during the Cultural Revolution.
