Diplomático winery is located at the foot of the Andes Mountains in Venezuela, a great place to brew rum. The region has fertile land, abundant water sources and a tropical climate, providing good conditions for sugarcane growth and rum production. Founded in 1959, Diplomático has three different distillation processes that combine to deliver unique rum.

How does Diplomático make rum?

1. Sugar cane

Sugar cane is the main raw material for making rum. Only home-grown sugar cane is used in Diplomático, most of which are grown within a radius of 100 km around the brewery. Diplomático grows different varieties of sugar cane, and the more important thing is "CAA diplomática", a variety that is very suitable for environmental conditions and can achieve good results in rum production. Get two different products from sugar cane to make rum: cane honey is used to make complex and rich rum, and molasses is used to make light rum. The main difference between the two is sugar.

2. Fermentation

Fermentation is part of the process of converting sugar into alcohol, a critical stage in the production of most aromatic compounds. At Diplomático, fermentation is done using its own yeast strain, which can shape the properties of different rums from the beginning, creating the desired exact fragrance. Low-alcohol rum made from molasses requires a short fermentation, about a day. A semi-complex rum made from sugar cane honey takes two days to ferment.

3. Distillation

Diplomático uses a unique combination of three distillation systems to produce a variety of distillates. This variety is at the heart of Diplomático technology, enabling Maestros Roneros to brew unique rum. The Barbet column originated from France and creates a light, sharp and fruity outline. The batch kettle is from Canada and is used to produce whiskey, which produces semi-complex rum with tropical and baked caramel flavors. Copper tank still used in Scotland for whiskey production brings Diplomático a very rich, rich and heavy rum that is perfect for the heart of all rums.

4. Aging

Most flavors and aromas in rum are produced during the aging process. The Diplomático factory is located in a special microclimate environment and can achieve maturity. The types of barrels used by Diplomático also play a key role in giving rum a unique feature. At Diplomático, three different oak barrels are used to age rum: bourbon, single malt whiskey and new American oak; and the precious former Pedro Jimenez and Oloroso Sherry barrels.

Diplomático uses the static method, which means that once the barrels are full, they cannot be moved, refilled or mixed. The barrels remained in place until Master Roneros opened them to create an extraordinary mix.

5. Mix

After the aging process, the Maestros Roneros team mixed the different rums together by mixing art. With their expertise and passion, they skillfully choose and mix rums to find good combinations of flavors and fragrances to create the iconic Diplomático style.
